Fair Jr.

It's been awhile...but, we are back from our vacation! It was wonderful, to say the least. I will edit the pictures and post about it later this week.

The night before we left, we stopped by the Madison County Fair. To be fair, it was a 'fair'. But, if you want my opinion, it was a fair jr. A baby fair. A mini fair. A midget fair. Okay, enough. Here are some pictures AND, a really cool story.

That's not the cool story...HERE is the cool story...

There was this little girl riding a horse with a trainer (parents forked up a couple bucks for her to do it) and she was so adorable! I had my camera and I took a few shots of her. Hoping that her parents wouldn't notice and get creeped out, the guy training her totally called me out and told the little girl to look at me and smile! Ah. I was embarrassed, to say the least. Then he pointed to her mom and told me that I should give some copies to her. I went over and showed her a few pics and got her email address. Meanwhile, that guy comes up to me (cowboy looking kind of person) and looks at my pictures through my viewing screen and asks me who I am with. Uh, I wanted to lie and rattle of a newspaper or magazines name, but, I didn't. I just said I was taking them for fun.

It was kind of neat thought because he thought I was professional! I will take it. Ha. Anyway- I went home and edited the pictures right away and sent mom the originals and edited ones. Here are the best ones, edited.

The last few are huge, haha. I had fun and look forward to taking more portraits! I am trying to get 'back on the horse' and start updating my photo blog a little more. I will keep you all updated on that.



Also, I know it seems weird that i have 3 blogs. But, they all have a purpose. Two of them are for my portfolio (it's required by my major) and one is this blog, showing Nephi and my cute life together. Don't judge.

If you like pina coladas...

First of all...I bought zucchini in Oregon (which I still need to blog about) and I wanted to try some fun things with it.

So, the question is, what can you do with zucchini?

YUM! Seriously. I was in heaven. Nephi...adjusted and I made him meat kabobs. But, he loved the brownies.


Anyway- here is the climax of this post...the coladas.

When I was younger (like 16) my best friend and I used to go with her family to Mexico, often. We looooved getting pina coladas! And you know what. It's weird but I often crave them. So, I saw this  recipe (ps-This is my go to site for recipes. I am obsessed.) and I HAD to make it! We had some friends over for a taco bar and I thought this would be the perfect touch.

The kosher salt on the rim was Nephi's touch. He loved it. I even caught him doing it the other day with a smoothie he made...what a weirdo.

These were SO good! Also, really easy. I felt like a legitimate bartender in 30 seconds. (Thanks to the Ninja, our new best friend)

Lesson Learned from the Husband

Just thought I would start off this post with an inspiring quote...

Credible, right? That's only the beginning.

On Monday, Nephi and I went for a walk for a snow cone (which I am trying to avoid but I had a terrible day and that always cheers me up). We went the long way to burn some calories and went behind the K-Mart by our house. (Side note: Yes, we live by a K-Mart. No, it's not ghetto. Avoid the stereotype, people.)Nephi saw a dresser in there and tried to convince me to help him get it out. I said no and we moved on and he kept trying to convince me to go back.

So, when we got home, we got into the car and drove over. We suspiciously circled the parking lot 3 times and at one point I yelled, "Michael Scofield wouldn't do it this way!" (Sarcastically. Kinda.) I convinced him to go home and to worry about it in the morning when it was daylight, but still I was convinced it was illegal and totally weird.

Yesterday, I was at work and I got a text with this picture...


Yep, he did it! I was shocked and laughed so hard! This kid...seriously.


So, I came home, we wiped it down, placed it, and now it looks like this...

Dinner for One





Since Nephi was at work tonight, I had to make dinner by myself. I have been obsessed brie cheese lately. It is super expensive so I buy it when it is on sale and freeze it until we use it. Tonight, I spread it on this wheat tortilla and just about melted when I ate it. It was so good! And then of course, zucchini on the side. (Stay tuned for more recipes using the zucchini)


Anyway- I am so ready for the weekend! We are having friends over for a dinner date friday night...any ideas of what to make? I was thinking a taco bar.

It Rained on Our Parade

Every summer, Rexburg hosts the International Dance and Music Festival. To launch the performances this week, they had a parade down Main Street. I passed by the set up on my way home from work and immediately called Nephi and told him we had to go! So, we ate dinner and walked over.

Before we left, it started getting cloudy.(It had rained previously in the day and then cleared up) I told Nephi maybe we shouldn't bring the camera, and thought to myself that maybe we should just bring the case. "Psh,
he reassured me. So, we went.

Poor Nephi. We got this mini frozen yogurt and it took forever to melt.

Sure enough, it ended up raining on this parade. We tried to wait it out while socializing with some ward members we saw, but, the rain kept coming. We put a bag over the camera, Nephi put it under his shirt, and we walked home. We were SOAKED! Bah. Oh well. It was a great memory.

Sunday Dinner Edition

Mallory's appetizing scale: 8
Nephi's appetizing scale: 6 (Respectfully. He is still trying to get used to the 'healthy stuff'. The garlic and cheese bread helped.)
